Cheesy Cajun Chicken Rice Bake

Ingredients:

1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized chunks
2 tbsp Cajun seasoning
1 tbsp olive oil
1 cup long-grain white rice, rinsed
2 cups chicken broth
1 cup heavy cream
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp smoked paprika
Salt and pepper, to taste
2 green onions, chopped (for garnish)

Directions:

Preheat your oven to 375°F (190°C).
In a bowl, toss the chicken chunks with Cajun seasoning, salt, and pepper. Set aside.
Heat olive oil in a large oven-safe skillet over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, until browned on all sides and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add the chicken broth, heavy cream, garlic powder, onion powder, and smoked paprika. Stir to combine.
Stir in the rinsed rice, ensuring it’s evenly distributed in the liquid. Bring the mixture to a simmer, then return the cooked chicken to the skillet. Stir to combine.
Sprinkle the shredded cheddar, mozzarella, and Parmesan cheese over the top of the chicken and rice mixture. Cover the skillet with a lid or aluminum foil.
Bake in the preheated oven for 20-25 minutes, or until the rice is tender and the cheese is melted and bubbly.
Remove from the oven and let it sit for 5 minutes before serving. Garnish with chopped green onions for a fresh, colorful finish.
