🧀 Cheesy Ground Beef Rice Casserole

📝 Ingredients:
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1/2 tsp dried oregano
1 cup uncooked long grain white rice
2 cups beef broth
1 can (10.5 oz) cream of mushroom soup
1/2 cup sour cream
1 1/2 cups shredded cheddar cheese (divided)
1/2 cup shredded mozzarella cheese
Fresh parsley for garnish (optional)
🍽️ Directions:
Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
Brown the beef: In a large skillet, cook ground beef with onion and garlic over medium heat until browned. Drain excess fat.
Season it up: Stir in salt, pepper, paprika, and oregano.
Mix the casserole base: In a large bowl, combine uncooked rice, beef broth, cream of mushroom soup, sour cream, 1 cup cheddar, and mozzarella. Add the cooked beef mixture and stir everything together.
Assemble and bake: Pour into prepared baking dish, cover with foil, and bake for 45 minutes.
Top with cheese: Remove foil, sprinkle remaining 1/2 cup cheddar on top, and bake uncovered for 10–15 more minutes, or until rice is tender and cheese is bubbly.
Rest and serve: Let sit for 5 minutes before serving. Sprinkle with chopped parsley if desired.
