Spicy Beef and Broccoli Rice Bowls

Ingredients:

1 lb beef sirloin, thinly sliced
1 tbsp olive oil
1 large onion, chopped
2 cloves garlic, minced
1 inch ginger, grated
1 red bell pepper, sliced
1 head broccoli, cut into florets
1 red chili pepper, finely chopped (optional, adjust to your spice preference)
1/4 cup soy sauce
2 tbsp honey
1 tbsp rice vinegar
1 tsp sesame oil
1/2 tsp red pepper flakes (optional, adjust to your spice preference)
2 cups cooked rice
Sesame seeds for garnish (optional)
Chopped green onions for garnish (optional)

Instructions:

1. Heat olive oil in a large wok or skillet over medium-high heat. Add beef and stir-fry until browned, about 3-5 minutes. Remove beef from wok and set aside.
2. Add onion to the wok and cook until softened, about 3-4 minutes. Add garlic and ginger and cook for another minute until fragrant.
3. Add red bell pepper and broccoli to the wok and stir-fry for 5-7 minutes, until slightly tender-crisp. Add red chili pepper (if using) during the last minute of cooking.
4. In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, and red pepper flakes (if using).
5. Return beef to the wok. Pour sauce over beef and vegetables and stir to coat everything evenly. Cook for another 2-3 minutes, allowing the sauce to thicken slightly.
6. Serve the beef and vegetable mixture over cooked rice. Garnish with sesame seeds and chopped green onions (if desired).
