šŸ« Reese’s Peanut Butter Chocolate Chip Cookie Bites šŸŖ
Ingredients:
1/2 cup unsalted butter, softened
1/2 cup smooth peanut butter
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1 large egg
1 teaspoon pure vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon fine salt
1 cup mini semi-sweet chocolate chips
1 cup Reese’s peanut butter chips (or finely chopped Reese’s minis)
1/2 cup melted chocolate or chocolate sauce, for drizzling
Instructions:
Prepare the Pan: Preheat your oven to 350°F (175°C). Lightly grease a mini muffin tin or line it with mini cupcake liners for easy removal.
Make the Dough: In a mixing bowl, beat together the softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract, mixing until fully incorporated.
Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined. Avoid overmixing.
Add Mix-Ins: Fold in the mini chocolate chips and Reese’s peanut butter chips until evenly distributed throughout the dough.
Fill the Cups: Scoop about 1 tablespoon of dough into each mini muffin cup, pressing it down gently to form an even layer.
Bake: Place the pan in the preheated oven and bake for 10–12 minutes, or until the edges are lightly golden and the centers appear slightly soft.
Cool and Drizzle: Allow the cookie cups to cool in the pan for 5 minutes before transferring them to a wire rack. Once cooled, drizzle generously with melted chocolate or chocolate sauce. Let the chocolate set before serving.
