Cookie sandwiches!
Ingredients:
For the Cookies:

2 1/4 cups all-purpose flour

1/2 teaspoon baking soda

1 cup unsalted butter (softened)

1/2 cup granulated sugar

1 cup packed brown sugar

2 teaspoons vanilla extract

2 large eggs

2 cups semi-sweet chocolate chips (or your favorite mix of chocolate)

Optional: 1 cup chopped nuts (like walnuts or pecans)

For the Filling:

2 cups heavy whipping cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

Instructions:
For the Cookies:
Preheat your oven to 350°F (175°C).

In a medium bowl, whisk together the flour and baking soda. Set aside.

In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract.

Gradually add the flour mixture, mixing until combined.

Fold in the chocolate chips (and nuts if you're using them).

Scoop tablespoon-sized portions of dough and place them on a baking sheet lined with parchment paper, spacing them about 2 inches apart.

Bake for 10-12 minutes, or until the edges are golden brown but the centers are still soft.

Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

For the Filling:
In a chilled mixing bowl, beat the heavy whipping cream until it starts to thicken.

Add the powdered sugar and vanilla extract, and continue to beat until stiff peaks form.

Transfer the whipped cream to a piping bag or use a spoon to apply it.

Assembling the Cookie Sandwiches:
Once the cookies have cooled completely, turn half of them upside down.

Pipe or spoon a generous amount of whipped cream onto the flat side of the cookies.

Place another cookie on top of each filled cookie to form a sandwich.

Press gently to secure and enjoy!

Tips:
You can use different fillings like vanilla ice cream, peanut butter, or Nutella for variety.

Store the sandwiches in an airtight container in the fridge if you're using whipped cream filling to keep it fresh.

Enjoy your delicious homemade cookie sandwiches!
