Ingredients (6 servings)

For the meat layer:

1 lb ground beef (or ground turkey/pork)

1 can (14 oz) diced tomatoes (no sugar added)

2 tbsp tomato paste

½ cup diced green bell pepper

½ small onion, chopped (optional, use sparingly for keto)

2 cloves garlic, minced

1 tsp Italian seasoning

½ tsp paprika

Salt & pepper, to taste

For the cheese layer:

2 cups shredded mozzarella cheese

1 cup shredded cheddar cheese

1 cup ricotta or cottage cheese (full-fat)

1 large egg

Optional veggie base (instead of pasta):

1 small head of cauliflower, riced (or use zucchini slices or cabbage layers)

Instructions

1. Prepare the meat sauce:

In a skillet, brown the ground beef over medium heat.

Add garlic, onion, peppers, and cook until softened.

Stir in diced tomatoes, tomato paste, and seasonings.

Simmer 10–15 minutes until thickened.

2. Prepare the cheese mix:

In a bowl, combine ricotta, 1 cup mozzarella, and egg. Mix well.

3. Layer the casserole:

Preheat oven to 375°F (190°C).

Grease a 9x13 baking dish.

Layer the bottom with cauliflower rice (or veggie of choice).

Spread half the meat sauce, then the ricotta mixture.

Repeat layers, finishing with meat sauce on top.

Sprinkle remaining mozzarella and cheddar cheese on top.

4. Bake:

Bake uncovered for 25–30 minutes, until cheese is melted and bubbly.

Let cool 5 minutes before serving.
