For the Chicken Curry:
Boneless chicken breast or thighs (cubed) 🍗

Red curry paste 🌶️
Coconut milk 🥥
Red bell pepper (diced)
Onion (chopped) 🧅
Lime juice & zest 🍋
Fish sauce or soy sauce
Brown sugar or honey 🍯

To Serve:
Steamed jasmine or basmati rice 🍚

Sauté chicken cubes in olive oil until lightly golden, then set aside. In the same pan, cook onion, garlic, and ginger until fragrant. Stir in curry paste, then pour in coconut milk and mix well. Add lime zest, juice, fish sauce, and sweetener. Simmer and return the chicken along with bell peppers. Let everything cook until the sauce thickens and the chicken is tender. Top with chopped cilantro and serve with rice and lime wedges.
