🥗 Mediterranean Chicken Rice Bowl with Tzatziki & Veggies 🍋🍅

🛒 Ingredients
For the Chicken:
🍗 2 boneless chicken breasts
🛢️ 1 tbsp olive oil
🍋 Juice of ½ lemon
🧄 1 garlic clove, minced
🌿 ½ tsp dried oregano
🧂 Salt & pepper to taste
For the Rice Base:
🍚 150g basmati or jasmine rice
💧 300ml water or broth
🧂 Pinch of salt
For the Tzatziki:
🥒 ½ cucumber, grated and drained
🥛 150g Greek yogurt
🧄 1 small garlic clove, minced
🍋 1 tsp lemon juice
🌿 1 tbsp fresh dill, chopped
🧂 Salt & pepper to taste
For the Bowl Toppings:
🥒 ½ cucumber, sliced
🫘 100g cooked chickpeas
🫒 6 Kalamata olives
🧅 ½ small red onion, thinly sliced
🍅 6 cherry tomatoes, halved
🌿 4 artichoke heart halves (marinated or canned)
🌿 Fresh parsley & dill for garnish
👩🍳 Instructions
Cook the rice: Rinse rice and cook with water or broth and a pinch of salt until fluffy. Set aside.
Marinate the chicken: Mix olive oil, lemon juice, garlic, oregano, salt, and pepper. Coat chicken and let sit 10 minutes.
Grill the chicken: Cook chicken in a grill pan or skillet for 5–6 minutes per side, until golden and cooked through (75°C internal temp). Rest, then slice.
Make the tzatziki: Combine grated cucumber, yogurt, garlic, lemon juice, dill, salt, and pepper. Chill until serving.
Assemble the bowl: Place rice in the center. Arrange sliced chicken, cucumber, chickpeas, olives, onion, cherry tomatoes, and artichokes around it.
Top & garnish: Add a generous spoon of tzatziki in the middle. Garnish with parsley and dill.
