Healthy No-Bake Peanut Butter Oat Brownie Bars
Ingredients:
1 1/2 cups rolled oats
1/2 cup natural peanut butter
1/4 cup unsweetened cocoa powder
1/4 cup honey or pure maple syrup
1/4 cup coconut oil
1/4 tsp salt
1/2 tsp vanilla extract
1/3 cup dark chocolate chips (melted, for drizzle)
Optional: pinch of sea salt or oats for garnish
Directions:
In a small saucepan over low heat, melt together peanut butter, coconut oil, honey (or maple syrup), and vanilla extract. Stir until smooth.
In a mixing bowl, combine oats, cocoa powder, and salt.
Pour the warm peanut butter mixture over the oats and mix until well combined and sticky.
Line an 8x8 baking pan with parchment paper and press the mixture evenly into the bottom of the pan using a spatula.
Melt chocolate chips in the microwave or over a double boiler. Drizzle over the top of the pressed oat mixture.
Garnish with a few oats or a pinch of sea salt if desired.
Chill in the fridge for 1-2 hours or until set.
Cut into squares and enjoy!
