ARROZ CALDO RECIPE 😋❤️
Ingredients:
2 Ibs. boneless, skinless chicken thighs, cut into serving pieces
1 cup jasmine rice + 1/2 cup glutinous rice
2 teaspoons chicken powder
8 cups water
2 tablespoons fish sauce (optional)
2 tablespoons cooking oil
1 medium onion- chopped
5 cloves garlic-minced
3 tablespoons ginger-
peeled,julienned •
salt and pepper to taste
1 teaspoon saffron threads(optional )
Toppings:
hard boiled eggs- cut into half
spring onions - chopped
fried garlic
lemon - cut into wedges
Procedure:
*In a large pot over medium heat, sauté onion, garlic, and ginger until aromatic.
*Add in the chicken pieces, and bouillon powder. *Stir several times and cover the pot with a lid. Let simmer on its own juice for about 5 minutes or until no longer pink. •
*Add in the rice (jasmin and glutinous) cook while stirring for 2-3 minutes . Pour in the water and broth and minutes. •
*Pour in the water and broth and bring to a boil. Cover pot and simmer, while mixing every now and then to prevent the rice from sticking at the bottom of the pot.
*Cook for 45 minutes or until rice has expanded, and soft. Stir in the fish sauce and saffron
*Season with salt and pepper, add more broth or water if needed. Cook for another minute or 2. *Taste, adjust seasoning.
*Ladle Arroz Caldo to a bowl
*Toppings with hard boiled egg, crispy garlic, spring onions, and freshly squeezed lemon juice .
