Stewed Beef with Onion in a Slow Cooker 🧅
Ingredients:
2 lbs beef stew meat, cut into chunks
2 tbsp olive oil
2 large yellow onions, sliced
3 garlic cloves, minced
2 cups beef broth (low sodium)
2 tbsp tomato paste
1 tbsp Worcestershire sauce
1 tsp dried thyme
1/2 tsp paprika
1/2 tsp black pepper
Salt to taste
2 tbsp cornstarch mixed with 2 tbsp cold water (optional, for thickening)
Fresh parsley for garnish (optional)
Directions:
In a large skillet over medium-high heat, heat olive oil and brown the beef chunks in batches for about 5-6 minutes. Transfer to the slow cooker.
In the same skillet, add sliced onions and garlic, sauté for 3-4 minutes until softened, then add to the slow cooker.
In a bowl, whisk together beef broth, tomato paste, Worcestershire sauce, thyme, paprika, black pepper, and salt. Pour mixture over the beef and onions.
Cover and cook on Low for 7-8 hours or High for 4-5 hours, until the beef is tender.
If a thicker sauce is desired, stir in the cornstarch slurry during the last 30 minutes of cooking.
Garnish with fresh parsley if using and serve hot over mashed potatoes, rice, or egg noodles.
