Ingredients
For the Tamarind Ginger Chicken:
🍗 1 lb boneless, skinless chicken breasts or thighs
🍋 2 tbsp tamarind paste
🧄 2 cloves garlic, minced
🌿 1 tbsp grated fresh ginger
🍯 1 tbsp honey or brown sugar
🥄 1 tbsp soy sauce
🌶️ 1/4 tsp red chili flakes (optional for heat)
🧂 1/2 tsp salt
🥄 1 tbsp olive oil
For the Mango Chili Salsa:
🥭 1 ripe mango, diced
🌶️ 1 red chili pepper, finely chopped (adjust for spice preference)
🧅 1/4 cup finely diced red onion
🍋 1 tbsp lime juice
🌿 2 tbsp fresh cilantro, chopped
🧂 Salt to taste
Instructions
1️⃣ Marinate the Chicken:
In a bowl, mix tamarind paste, garlic, ginger, honey, soy sauce, chili flakes, salt, and olive oil.
Add the chicken, ensuring it is well coated. Marinate for at least 30 minutes (up to 2 hours for deeper flavor).
2️⃣ Cook the Chicken:
Heat a skillet or grill pan over medium-high heat.
Add the chicken and cook for 5-7 minutes per side, or until golden brown and fully cooked. Let the chicken rest for 5 minutes before slicing.
3️⃣ Prepare the Mango Chili Salsa:
In a bowl, combine diced mango, red chili, red onion, lime juice, cilantro, and a pinch of salt. Mix well and set aside.
4️⃣ Assemble the Dish:
Plate the cooked chicken and spoon the mango chili salsa over the top or on the side.
5️⃣ Garnish and Serve:
