🍲 Jamaican Oxtail Stew
Ingredients:
2.5 lbs beef oxtail, cut into chunks
2 tbsp olive oil
2 tsp salt
1 tsp black pepper
1 tsp all-purpose seasoning
1 tsp garlic powder
1 tsp onion powder
1 tbsp brown sugar
2 cloves garlic, minced
1 medium onion, chopped
2 stalks green onions, chopped
1 Scotch bonnet pepper, chopped (optional for heat)
1 tsp fresh thyme (or 1/2 tsp dried)
1 tbsp tomato ketchup
1 tbsp soy sauce
1 tbsp Worcestershire sauce
2 cups beef broth or water
1 can (15 oz) butter beans, drained and rinsed
2 carrots, chopped
1 tbsp cornstarch + 2 tbsp water (slurry for thickening, optional)
Instructions:
1️⃣ Season the oxtail with salt, pepper, all-purpose seasoning, garlic powder, onion powder, and brown sugar. Let it marinate for at least 2 hours or overnight. 🧂
2️⃣ Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the oxtail pieces and brown on all sides. This adds flavor! 🍳
3️⃣ Add the chopped onion, garlic, green onions, thyme, Scotch bonnet pepper, ketchup, soy sauce, and Worcestershire sauce to the pot. Stir and cook for 5 minutes. 🧅🌶️
4️⃣ Pour in beef broth or water to just cover the oxtail. Bring to a boil, then reduce heat to low. Cover and simmer for about 2.5 to 3 hours, or until the oxtail is tender and the meat is falling off the bone. 🕰️
5️⃣ Add the carrots and butter beans, stir gently, and cook uncovered for another 20–30 minutes until the sauce thickens slightly. 🥕🫘
6️⃣ If needed, mix cornstarch with water to make a slurry, and stir it in to thicken the gravy. Let it simmer for 5 minutes more. 🍲
7️⃣ Taste and adjust seasonings. Serve hot with rice and peas or white rice. Enjoy! 🍚
