🥜 Peanut Butter S’mores Sandwich Cookies 🍫
Ingredients
For the Cookies:
1 cup (250g) creamy peanut butter (smooth, no-stir variety works best)
½ cup (100g) granulated sugar
½ cup (110g) packed light brown sugar
1 large egg, room temperature
1 tsp pure vanilla extract
½ tsp baking soda
¼ tsp fine sea salt
For the Filling:
1 cup (180g) semi-sweet chocolate chips, melted
1 cup (120g) marshmallow fluff
Instructions
1. Prep & Preheat
Heat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. Make the Dough
In a large bowl, blend peanut butter, both sugars, egg, vanilla, baking soda, and salt until fully combined. The dough should be thick and slightly sticky.
3. Shape & Bake
Scoop dough into 1-tbsp portions, rolling into balls. Place on the sheet, spacing 2 inches apart.
Flatten each ball with a fork in a crosshatch pattern (like classic PB cookies).
Bake 8–10 minutes until edges turn golden. Let cool on the sheet for 5 minutes, then transfer to a rack.
4. Assemble
Spread 1 tsp melted chocolate on the flat side of a cookie. Top with ½ tbsp marshmallow fluff.
Press a second cookie on top, creating a sandwich. Repeat for all.
5. Set & Serve
Let sit 10 minutes for chocolate to firm. For a toasted finish, lightly torch the marshmallow edges.
