Peanut Butter Cup Lava Cupcakes
Ingredients:
For the Cupcake Batter:
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup buttermilk
1/2 cup hot water
For the Peanut Butter Filling:
1 cup creamy peanut butter
1/2 cup powdered sugar
12 mini peanut butter cups
For the Chocolate Drizzle:
1 cup chocolate chips, melted
For the Peanut Butter Frosting:
1 cup creamy peanut butter
1/2 cup unsalted butter, softened
1/2 cup powdered sugar
1/4 cup heavy cream
For Garnish:
Additional mini peanut butter cups
Directions:
Preheat the Oven:
Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
Mix the Dry Ingredients:
In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
Cream the Butter and Sugar:
In a large mixing bowl, beat the softened butter and granulated sugar until light and fluffy.
Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
Combine Wet and Dry Ingredients:
Gradually add the dry ingredients to the wet mixture, alternating with buttermilk. Start and end with the dry ingredients. Mix until just combined.
Stir in the hot water until the batter is smooth.
Fill the Cupcake Liners:
Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely.
Prepare the Peanut Butter Filling:
In a small bowl, mix 1 cup of peanut butter with 1/2 cup powdered sugar until smooth.
Cut a small hole in the center of each cooled cupcake and fill it with the peanut butter mixture.
Make the Peanut Butter Frosting:
In a mixing bowl, beat together 1 cup of peanut butter and 1/2 cup of softened butter until creamy.
Gradually add the powdered sugar, mixing until smooth. Finally, add heavy cream and beat until fluffy.
Frost and Garnish:
Frost the cupcakes generously with the peanut butter frosting.
Drizzle melted chocolate over the top and garnish each cupcake with a mini peanut butter cup.
