Grilled Chicken Skewers – juicy, smoky, and bursting with vibrant summer flavor!
Ingredients:
1 1/2 pounds boneless, skinless chicken breasts, cut into 1 1/2-inch cubes
1 red bell pepper, cut into chunks
1 yellow bell pepper, cut into chunks
1 green bell pepper, cut into chunks
1 small red onion, cut into chunks
2 tablespoons olive oil
1 tablespoon lemon juice
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon paprika
Salt and freshly ground black pepper, to taste
Wooden or metal skewers (if wooden, soak in water for 30 minutes)
Instructions:
In a large bowl, combine olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.
Add the chicken cubes to the bowl and toss until fully coated. Marinate for at least 30 minutes (or up to 2 hours in the fridge).
Thread the marinated chicken onto skewers, alternating with pieces of bell peppers and red onion.
Preheat the grill or grill pan to medium-high heat. Lightly oil the grates.
Grill the skewers for 10–12 minutes, turning every few minutes, until the chicken is cooked through and has beautiful grill marks.
Remove from the grill and let rest for a couple of minutes before serving.
Decoration Tips:
Arrange the skewers in neat rows on a large serving platter, slightly overlapping for a full presentation. Garnish the platter with fresh lemon wedges, chopped parsley, or a few sprigs of thyme to enhance the visual freshness. For a rustic summer feel, serve over a light linen napkin with grilled flatbreads or rice on the side.
