1 cup cooked white or brown rice 🍚
1/2 cup shredded lettuce 🥬
1/4 cup cherry tomatoes, halved 🍅
1/4 cup canned corn, drained 🌽
1/4 avocado, sliced 🥑
1/4 red onion, thinly sliced 🧅
A handful of mixed greens 🥗
For the Sauce 🌟:
2 tbsp plain Greek yogurt or mayo 🥄
1 tsp Sriracha or hot sauce 🌶️
1/2 tsp lemon juice 🍋

Prepare the Chicken:
Rub the chicken breast with olive oil, paprika, garlic powder, cumin, salt, and pepper. Grill or pan-sear over medium heat for 4-5 minutes per side, or until cooked through (internal temp 165°F/74°C). Let rest for 5 minutes, then slice.
Make the Sauce:
In a small bowl, mix Greek yogurt or mayo with Sriracha and lemon juice. Adjust heat to your preference.
Assemble the Bowl:
