🍢 Mediterranean Chicken Skewers with Herbed Rice, Grilled Zucchini & Tzatziki 🧄🍋

🛒 Ingredients:
🐔 2 chicken breasts, cut into chunks
🍋 Juice of 1 lemon + lemon slices for serving
🧄 2 garlic cloves, minced
🌿 1 tsp dried oregano
🌿 1 tsp chopped fresh parsley or dill
🫒 2 tbsp olive oil
🧂 Salt & black pepper, to taste
🍚 1 cup basmati or long-grain rice
🧂 Salt for boiling rice
🌿 1 tbsp chopped fresh dill or parsley (for garnish)
🧈 1 tsp butter (optional, for rice)
🥒 1 zucchini, sliced into rounds
🫒 1 tbsp olive oil (for zucchini)
🧂 Salt & pepper, to taste
🍄 6–8 mushrooms, halved
🥔 6 baby potatoes, cubed
🫒 1 tbsp olive oil (for roasting)
🌿 1/2 tsp dried thyme
🧄 1 garlic clove, crushed
🥣 For the tzatziki:
1/2 cup plain Greek yogurt
1/4 cucumber, grated and squeezed dry
1 garlic clove, minced
1 tbsp fresh dill or mint, finely chopped
1 tsp lemon juice
🧂 Salt to taste
👩🍳 Instructions:
Marinate the chicken: Mix lemon juice, garlic, oregano, parsley, olive oil, salt, and pepper. Coat chicken pieces and marinate for at least 20 minutes.
Prepare the rice: Rinse rice thoroughly. Cook 1 cup rice with 2 cups water and salt. Simmer for 12–15 minutes. Fluff and mix in optional butter and chopped herbs.
Roast the veggies: Toss potatoes and mushrooms with olive oil, garlic, thyme, salt, and pepper. Roast at 200°C (400°F) for 20–25 minutes until golden.
Grill the zucchini: Brush zucchini rounds with olive oil, salt, and pepper. Grill on both sides for 3–4 minutes until charred and tender.
Cook the chicken: Grill chicken chunks (or skewer them first) for about 5–6 minutes per side until cooked through and nicely browned.
Make the tzatziki: Combine yogurt, cucumber, garlic, lemon juice, and herbs. Season with salt. Chill until serving.
Assemble: Arrange the chicken, rice, grilled zucchini, roasted mushrooms and potatoes on a plate. Add lemon slices and a small bowl of tzatziki. Garnish with herbs.
