Grilled Vietnamese Lemongrass Chicken

A flavorful and aromatic dish, this Grilled Vietnamese Lemongrass Chicken is marinated in a zesty lemongrass mixture and grilled to perfection. It’s perfect for summer grilling or as a delicious weeknight dinner.

Ingredients:

8 boneless chicken thighs

Lemongrass Chicken Marinade:

1 stalk lemongrass (approx. 3 and 1/2 tablespoons)

3 cloves garlic, minced

2 tablespoons fish sauce

1 tablespoon soy sauce

1 tablespoon honey

1 tablespoon lime juice

1 tablespoon vegetable oil

1/2 teaspoon ground black pepper

1/4 teaspoon salt

Directions:

Begin by preparing the lemongrass. Cut off the root end and remove the tough outer layers. Finely chop the stalk into small pieces and then smash it with the side of a knife to release its oils.

In a mixing bowl, combine the minced lemongrass, garlic, fish sauce, soy sauce, honey, lime juice, vegetable oil, black pepper, and salt to create the marinade.

Add the boneless chicken thighs to the marinade, ensuring each piece is thoroughly coated.

Cover the chicken and let it marinate for at least 1 hour in the fridge (overnight for more intense flavor).

Preheat your grill to medium-high heat.

Grill the marinated chicken thighs for about 5-7 minutes on each side or until fully cooked through and charred on the outside.

Once done, remove the chicken from the grill and allow it to rest for a few minutes before serving.

Serve with steamed rice or in a lettuce wrap for a fresh, delicious meal.
