Grilled Fish & Shrimp with Citrus Salsa ππ€
Light, zesty, and perfect for a fresh dinner plate!
π Ingredients:
For the Seafood:
2 white fish fillets (tilapia, cod, or mahi-mahi)
1/2 lb large shrimp (peeled & deveined)
2 tbsp olive oil
1 tsp garlic powder
1/2 tsp paprika
Salt & pepper, to taste
For the Citrus Salsa:
1 orange, peeled and diced
1/2 cup cherry tomatoes, halved
1/4 red onion, finely chopped
1 tbsp fresh cilantro or parsley
1 tsp jalapeΓ±o, finely chopped (optional)
Juice of 1/2 lime
Pinch of salt
Sides:
1 cup cooked white rice
1 bunch asparagus, trimmed
1 tbsp olive oil
Salt & pepper, to taste
π½οΈ Directions:
1οΈβ£ Make the Citrus Salsa:
Combine orange, tomatoes, onion, cilantro, jalapeΓ±o, lime juice, and salt in a bowl. Chill until ready to serve.
2οΈβ£ Season & Cook Seafood:
Toss fish and shrimp in olive oil, garlic powder, paprika, salt, and pepper. Grill or pan-sear fish 3β4 minutes per side and shrimp 2 minutes per side until cooked through.
3οΈβ£ Cook the Asparagus:
In a skillet, sautΓ© asparagus with olive oil, salt, and pepper until tender-crisp, about 4β5 minutes.
4οΈβ£ Plate the Dish:
On each plate, layer rice, top with grilled fish, spoon citrus salsa over the top, and add shrimp and asparagus on the side.
5οΈβ£ Serve & Enjoy:
Garnish with extra herbs or a lime wedge for an extra zing!
