Bang Bang Shrimp Tacos with Asian Slaw 🍤🌮🔥

Ingredients:
1 pound large shrimp, peeled and deveined
1/2 cup mayonnaise
1/4 cup sriracha (or more, to taste)
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon honey
1 teaspoon sesame oil
1/2 teaspoon grated ginger
1/4 cup chopped green onions
1/2 cup shredded carrots
1/2 cup shredded red cabbage
1/4 cup chopped cilantro
12 small corn or flour tortillas
Optional: lime wedges for serving
Instructions:
1. Prepare the Bang Bang Sauce: In a medium bowl, whisk together mayonnaise, sriracha, soy sauce, rice vinegar, honey, sesame oil, and ginger until well combined. Taste and adjust seasonings as needed. Stir in half of the green onions.
2. Cook the Shrimp: Heat a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side, or until pink and cooked through.
3. Make the Asian Slaw: In a separate bowl, combine shredded carrots, red cabbage, cilantro, and remaining green onions.
4. Assemble the Tacos: Warm tortillas according to package directions. Place cooked shrimp in each tortilla. Top with a generous spoonful of Bang Bang sauce and a portion of the Asian slaw.
5. Serve: Serve immediately with lime wedges, if desired. Enjoy!
