Coconut Lime Fish with Cilantro
Servings: 4
Ingredients:
4 white fish fillets (such as cod, tilapia, or snapper)
1 tablespoon olive oil or coconut oil
Salt and freshly ground black pepper, to taste
1 teaspoon ground cumin (optional, for extra flavor)
1 can (14 oz / 400 ml) coconut milk (full-fat for creaminess)
Zest and juice of 2 limes
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 tablespoon honey or maple syrup (optional, for a touch of sweetness)
1 tablespoon soy sauce or tamari (optional, for depth of flavor)
Fresh cilantro, chopped (for garnish)
Lime wedges (for serving)
Instructions:
Prepare the Fish: Pat the fish fillets dry with paper towels. Season both sides with salt, pepper, and ground cumin (if using).
Heat the olive oil (or coconut oil) in a large skillet over medium-high heat. Once the oil is hot, add the fish fillets and cook for 3-4 minutes on each side, or until the fish is golden brown and cooked through. The fish should flake easily with a fork. Remove the fish from the skillet and set aside.
Make the Coconut Lime Sauce: In the same skillet, lower the heat to medium. Add the minced garlic and grated ginger to the pan, and cook for 1-2 minutes, stirring frequently, until fragrant.
Pour in the coconut milk, lime zest, and lime juice. Stir to combine and let the mixture simmer for 3-4 minutes to thicken slightly. If you like a touch of sweetness, stir in the honey or maple syrup. Add the soy sauce or tamari (if using) for added depth of flavor.
Combine the Fish with the Sauce: Return the cooked fish fillets to the skillet, spooning some of the coconut lime sauce over the top. Let the fish simmer in the sauce for an additional 2-3 minutes to soak in the flavors.
Serve: Plate the fish fillets and pour the coconut lime sauce over them. Garnish with freshly chopped cilantro and serve with lime wedges on the side.
Suggestions:
Serve with a Side: This dish pairs well with steamed jasmine rice, quinoa, or sautéed vegetables. You can also serve it with a light salad or roasted potatoes.
Spice it Up: For a little extra heat, add some red pepper flakes or chopped fresh chili to the sauce.
Vegetarian Option: You can substitute the fish with tofu or tempeh for a plant-based version of this dish.
