𝐘𝐀𝐘 𝐎𝐑 𝐍𝐀𝐘 𝐅𝐎𝐑 𝐓𝐇𝐈𝐒 𝐀𝐦𝐚𝐳𝐢𝐧𝐠 𝐎𝐥𝐝-𝐅𝐚𝐬𝐡𝐢𝐨𝐧𝐞𝐝 𝐑𝐢𝐜𝐞 𝐏𝐮𝐝𝐝𝐢𝐧𝐠

Ingredients:
- 3/4 cup uncooked white rice
- 1 1/2 cups water
- 2 cups milk, divided
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup raisins (optional)
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 large eggs

Instructions:
1. In a medium saucepan, bring water to a boil. Add rice, reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the water is absorbed.

2. In another saucepan, combine the cooked rice, 1 1/2 cups of milk, sugar, and salt. Cook over medium heat, stirring frequently, until thick and creamy, about 15-20 minutes.

3. Stir in the remaining 1/2 cup of milk, raisins (if using), vanilla extract, cinnamon, and nutmeg.

4. In a small bowl, beat the eggs. Gradually add about 1/2 cup of the hot rice mixture to the eggs, stirring constantly to temper the eggs.

5. Slowly add the egg mixture back into the saucepan with the rice, stirring constantly. Cook for an additional 2-3 minutes until the pudding thickens.

6. Remove from heat and let it cool slightly before serving.

7. Serve warm or chilled, and enjoy your Amazing Old-Fashioned Rice Pudding!
