Healthy Breakfast Cookies
Ingredients:
2 ripe bananas, mashed
1/2 cup creamy peanut butter
1/4 cup honey
1 teaspoon vanilla extract
2 cups old-fashioned oats
1/2 cup unsweetened shredded coconut
1/4 cup chia seeds
1/4 cup mini chocolate chips or raisins (optional)
Instructions:
Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper or a silicone baking mat.
In a large mixing bowl, combine the mashed bananas, peanut butter, honey, and vanilla extract. Stir until well combined.
Add the oats, shredded coconut, chia seeds, and mini chocolate chips or raisins (if using) to the bowl. Stir until all the ingredients are evenly incorporated and a thick cookie dough forms.
Using a cookie scoop or spoon, drop the dough onto the prepared baking sheet, spacing the cookies about 2 inches apart. Use your fingers or the back of a spoon to gently flatten each cookie.
Bake in the preheated oven for 15-18 minutes, or until the cookies are lightly golden brown around the edges.
Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Once cooled, store the cookies in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
