1 tbsp tomato paste 🍅

200ml coconut milk 🥥

100ml chicken broth 🍗

2 tbsp oil (vegetable or coconut) 🛢

Salt & pepper to taste 🧂

Fresh parsley or cilantro for garnish 🌿

For the rice:
250g jasmine or basmati rice 🍚

Salt for cooking water 🧂

👩‍🍳 Instructions:
Cook the rice in salted water as directed. In a large skillet, heat oil over medium heat. Sauté onion until soft, then add garlic and ginger, cooking for 1 minute. Add curry powder, turmeric, and tomato paste, stirring for 30 seconds to release aromas. Add the chicken and cook until lightly browned. Pour in coconut milk and chicken broth, season with salt and pepper, and let simmer uncovered for 12–15 minutes until the sauce thickens and chicken is tender. Serve hot over rice and garnish with fresh herbs.
