Garlic Butter Tilapia with Lemon Rice
Zesty Lemon Garlic Butter Tilapia with Aromatic Rice
Ingredients:
4 tilapia fillets (about 6 oz each)
4 tablespoons unsalted butter
4 cloves garlic, minced
1 tablespoon fresh parsley, chopped
1 teaspoon dried oregano
1/2 teaspoon paprika
1/4 teaspoon red pepper flakes (optional)
2 lemons (1 juiced, 1 sliced)
Salt and pepper to taste
1 1/2 cups long-grain white rice
3 cups chicken broth
1 tablespoon olive oil
1 small onion, finely diced
2 cloves garlic, minced
1 tablespoon lemon zest
2 tablespoons fresh parsley, chopped
Directions:
Preheat oven to 400°F (200°C).
Pat tilapia fillets dry with paper towels and season both sides with salt and pepper.
In a small saucepan, melt butter over medium heat. Add minced garlic and cook for 1 minute until fragrant.
Remove from heat and stir in chopped parsley, oregano, paprika, red pepper flakes (if using), and juice from half a lemon.
Place tilapia fillets in a baking dish and pour the garlic butter mixture evenly over each fillet.
Top with lemon slices and bake for 12-15 minutes, or until fish flakes easily with a fork.
While the fish is baking, prepare the lemon rice. Rinse rice under cold water until water runs clear.
In a medium saucepan, heat olive oil over medium heat. Add diced onion and cook until translucent, about 3-4 minutes.
Add minced garlic and cook for another minute until fragrant.
Add rice to the pan and stir to coat with oil. Cook for 1-2 minutes until slightly toasted.
Pour in chicken broth and bring to a boil. Reduce heat, cover, and simmer for 15-18 minutes until rice is tender and liquid is absorbed.
Remove from heat and let stand, covered, for 5 minutes.
Fluff rice with a fork, then stir in lemon zest, remaining lemon juice, and chopped parsley.
Serve tilapia fillets over a bed of lemon rice and garnish with additional lemon slices and parsley if desired.
