📝 Ingredients:
For the Garlic Butter Salmon:
2 salmon fillets
1 tbsp butter (melted)
1 tsp olive oil
1 clove garlic (minced)
½ tsp salt
½ tsp black pepper
½ tsp paprika
½ tsp lemon juice
For the Broccoli Rice:
1 cup jasmine rice
2 cups water
1 cup broccoli florets (chopped)
½ tsp salt
½ tsp black pepper
For the Side:
½ cucumber (sliced)
🍽️ Step by Step:
1️⃣ Cook the Rice:
In a pot, bring water to a boil and add salt.
Stir in jasmine rice, cover, and simmer for 12–15 minutes.
In the last 5 minutes, add chopped broccoli on top and steam.
Fluff with a fork and season with black pepper.
2️⃣ Prepare the Garlic Butter Salmon:
Preheat the oven to 400°F (200°C).
Mix melted butter, olive oil, minced garlic, salt, pepper, paprika, and lemon juice.
Brush the mixture over the salmon fillets.
3️⃣ Cook the Salmon:
Bake for 12–15 minutes or pan-sear over medium heat for 4–5 minutes per side.
Flake the salmon into bite-sized pieces.
4️⃣ Assemble the Plate:
Serve the flaked salmon alongside the broccoli rice.
Add fresh cucumber slices on the side for a refreshing crunch.
