Beef and Veggie Fried Rice
Ingredients:
2 cups cooked rice (preferably cold)
1/2 lb beef sirloin, cut into cubes
1 cup broccoli florets
1/2 cup diced red bell pepper
1/2 cup diced yellow bell pepper
1/2 cup green peas
2 tbsp soy sauce
1 tbsp sesame oil or vegetable oil
1 garlic clove, minced
Salt and pepper to taste
Fresh cilantro (optional for garnish)
Directions:
1. Heat oil in a large skillet or wok over medium-high heat.
2. Sear the beef cubes until browned, about 3-4 minutes. Remove and set aside.
3. Add garlic and stir-fry veggies until just tender.
4. Add rice to the pan and stir-fry for 2-3 minutes.
5. Return beef to the pan, add soy sauce, salt, and pepper. Mix well.
6. Cook another 2 minutes until everything is hot and coated in sauce.
7. Garnish with fresh cilantro if desired and serve hot.
