Prepare the Coconut Rice:
Rinse the rice well under cold water until the water runs clear.
In a saucepan, combine the rice, coconut milk, water, salt, and sugar.
Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until the liquid is absorbed and rice is tender.
Turn off the heat and let it sit, covered, for another 5 minutes, then fluff with a fork.

Season salmon fillets with salt and pepper.
