Ingredients
For the Chicken:

• 2 scallions, chopped

For Cooking:
• 2 tbsp vegetable oil
• 1 medium potato, peeled and diced
• 1 medium carrot, sliced
• 1 cup coconut milk
• 1 cup chicken stock or water
• 1 tsp more Jamaican curry powder (optional, for a stronger flavor)
Instructions
1. Marinate the Chicken:
• In a large bowl, combine the chicken pieces with curry powder, turmeric, garlic, ginger, onion, scallions, thyme, seasoning, salt, and pepper.
• Cover and let it marinate in the fridge for at least 1 hour, preferably overnight for deeper flavors.
2. Brown the Chicken:
• Heat the vegetable oil in a large pot or Dutch oven over medium heat.
