Nutter Butter Cookies
Ingredients:
- 1 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
- Additional granulated sugar for rolling
Directions:
1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. In a large bowl, cream together peanut butter, granulated sugar, brown sugar, and softened butter until light and fluffy.
3. Beat in the egg and vanilla extract until well combined.
4. In a separate bowl, whisk together flour, baking soda, and salt.
5. Gradually add the dry ingredients to the peanut butter mixture, mixing until just incorporated.
6. Scoop tablespoon-sized portions of dough and roll into balls.
7. Roll each ball in granulated sugar to coat lightly.
8. Place the dough balls on the prepared baking sheet about 2 inches apart.
9. Using a fork, gently press down on each ball twice, creating a crisscross pattern.
10. Bake for 10-12 minutes, or until the edges are lightly golden.
11. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
