🛒 Ingredients
Chicken & Sauce:
500g chicken breast, cut into cubes
1 tbsp olive oil
2 garlic cloves, minced
3 tbsp soy sauce
2 tbsp honey or brown sugar
1 tbsp balsamic vinegar (or rice vinegar)
1 tsp cornstarch + 2 tbsp water
½ tsp chili flakes (optional)
Rice:
250g red rice (or mix of red & white rice)
500ml water
Pinch of salt
Broccoli:
250g broccoli florets
Salt, to taste
👩🍳 Method
Cook rice: Rinse rice, then simmer in salted water for 25–30 mins until tender. Drain if needed.
Prepare sauce: Mix soy sauce, honey, vinegar, and cornstarch slurry in a bowl.
Cook chicken: Heat oil in a skillet. Fry chicken 6–7 mins until golden and cooked through. Add garlic and cook 1 more minute.
Glaze: Pour in sauce, stir 2–3 mins until thick and glossy.
Steam broccoli: Steam florets for 4–5 mins until tender-crisp.
Assemble: Plate rice, chicken with sauce, and broccoli.
