Cilantro Lime Salmon 🍋🐟

Ingredients:
- 4 salmon fillets (about 150 g each)
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 3 garlic cloves, minced
- Juice and zest of 1 lime
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste

Directions:
1. Pat the salmon fillets dry with paper towels and season both sides with salt and pepper.
2. Heat olive oil in a large skillet over medium-high heat. Place the salmon fillets skin-side down (if applicable) and cook for 4–5 minutes until the skin is crispy. Flip and cook for another 3–4 minutes until golden and cooked through. Remove and set aside.
3. In the same skillet, lower the heat to medium and add the butter. Stir in the garlic and cook for 1 minute until fragrant.
4. Add the lime juice and zest, cooking for another minute. Stir in the chopped cilantro.
5. Return the salmon to the skillet and spoon the sauce over the fillets to coat them evenly.
6. Serve hot with rice, quinoa, or roasted vegetables, and garnish with extra cilantro if desired.
