Ingredients:
- 2 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 medium carrots, sliced
- 2 stalks celery, chopped
- 1 cup uncooked rice (white or brown)
- 8 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 tsp dried thyme
- 1 tsp dried parsley
- Salt and pepper to taste
- Fresh parsley for garnish (optional)

Directions:
Step 1: In a large pot, heat olive oil over medium heat. Once hot, add diced onion, minced garlic, sliced carrots, and chopped celery. Sauté the mixture for about 5 minutes, stirring occasionally until the vegetables start to soften.
