Teriyaki Chicken & Broccoli Stir-Fry 🥢🍗🥦

Ingredients:
For the Chicken:
2 boneless, skinless chicken breasts, cubed 🍗
1 tbsp cornstarch
1 tbsp soy sauce 🥢
1 tbsp olive oil 🫒
For the Stir-Fry:
1 cup broccoli florets 🥦
½ cup mushrooms, sliced 🍄
1 garlic clove, minced 🧄
1 tsp sesame oil (optional)
For the Teriyaki Sauce:
3 tbsp soy sauce 🥢
1 tbsp honey 🍯
1 tbsp brown sugar
½ tsp ginger, grated
1 tsp cornstarch mixed with 2 tbsp water
Instructions:
Prepare the Chicken: Toss the chicken cubes with cornstarch and soy sauce. Let it marinate for 5 minutes.
Cook the Chicken: Heat olive oil in a pan over medium-high heat. Cook the chicken until golden brown and cooked through, then remove from the pan.
Sauté the Vegetables: In the same pan, add a little more oil if needed. Sauté broccoli, mushrooms, and garlic for about 3 minutes until slightly tender.
Make the Sauce: In a small bowl, mix soy sauce, honey, brown sugar, and ginger. Pour into the pan and bring to a simmer. Stir in the cornstarch-water mixture to thicken.
Combine Everything: Return the chicken to the pan and stir well until coated in the sauce. Cook for another 2 minutes.
Serve & Enjoy: Garnish with sesame seeds or green onions and serve with rice or noodles!
