Healthy Noodle Soup in Ginger-Garlic Broth
Ingredients:
- 1 tablespoon sesame oil
- 5 garlic cloves, finely chopped
- 2 tablespoons fresh ginger, minced
- 6 cups low-sodium vegetable broth
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 200g soba noodles
- 1 cup thinly sliced mushrooms
- 1 cup shredded cabbage
- 2 cups spinach leaves
- Green onions and sesame seeds for garnish
Directions:
1. Heat sesame oil in a soup pot over medium heat. Sauté garlic and ginger until fragrant.
2. Add the vegetable broth, soy sauce, and rice vinegar. Bring to a gentle boil.
3. Add soba noodles and cook according to package instructions.
4. Stir in mushrooms, cabbage, and spinach. Simmer for 5 minutes until vegetables are tender.
5. Serve hot, garnished with green onions and sesame seeds.
