Mediterranean Keto Ground Chicken Skillet with Olives and Feta
Ingredients:
1.5 lbs ground chicken
2 tbsp olive oil
4 cloves garlic, minced
1 medium onion, finely chopped
1 cup diced tomatoes (canned or fresh)
1/2 cup kalamata olives, sliced
1/2 cup crumbled feta cheese
1/4 cup cream cheese, softened
1/2 cup heavy cream
1 tsp dried oregano
1 tsp dried thyme
1/2 tsp smoked paprika
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Directions:
1. Heat olive oil in a large skillet over medium-high heat. Add chopped onion and garlic, sauté until translucent and fragrant, about 3-4 minutes.
2. Add ground chicken to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 7-8 minutes.
3. Stir in diced tomatoes, olives, oregano, thyme, smoked paprika, salt, and pepper. Cook for another 3 minutes to combine flavors.
4. Lower heat to medium and add cream cheese and heavy cream. Stir continuously until the cream cheese melts and the sauce becomes creamy and smooth.
5. Sprinkle crumbled feta over the top, allowing it to soften into the sauce, creating a rich, tangy, and cheesy finish.
6. Garnish with fresh parsley and serve hot, perfect on its own or alongside cauliflower rice for a full keto meal.
