β’ 4 boneless, skinless chicken breasts or thighs
β’ 2 tbsp olive oil
β’ 3 tbsp honey
β’ 2 tbsp soy sauce
β’ 1 tbsp fresh ginger, grated
β’ 2 cloves garlic, minced
β’ 1 tbsp rice vinegar
β’ 1/2 tsp red pepper flakes (adjust for spice level)
β’ Salt and pepper, to taste
β’ For the Yum Yum Sauce:
β’ 1/2 cup mayonnaise
β’ 2 tbsp ketchup
β’ 1 tbsp rice vinegar
β’ 1 tsp garlic powder
β’ 1 tsp sugar
β’ 1 tsp sriracha (optional, for extra heat)
β’ 1 tbsp water (to thin, if needed)
β’ Salt, to taste
β’ For the Bowl:
β’ 2 cups cooked rice (white, brown, or jasmine rice)
β’ 1 cup steamed broccoli
β’ 1/2 cucumber, sliced thin
β’ 1/4 cup shredded carrots
β’ Fresh cilantro, chopped (for garnish)
Instructions:
1. Make the Spicy Honey-Ginger Chicken:
β’ In a bowl, whisk together the honey, soy sauce, grated ginger, minced garlic, rice vinegar, red pepper flakes, salt, and pepper to create the marinade.
β’ Season the chicken with salt and pepper, and pour the marinade over the chicken. Let it marinate for at least 20 minutes (or up to 2 hours in the refrigerator for more flavor).
β’ Heat the olive oil in a large skillet over medium-high heat. Cook the chicken for 6-7 minutes per side, or until the internal temperature reaches 165Β°F (74Β°C) and the chicken is nicely glazed. Remove from the skillet and set aside to rest for a few minutes before slicing into strips.
2. Make the Yum Yum Sauce:
β’ In a small bowl, whisk together mayonnaise, ketchup, rice vinegar, garlic powder, sugar, sriracha (if using), and a pinch of salt.
β’ Add water a little at a time to achieve your desired consistency. Adjust seasoning with salt and more sriracha if you like it spicier.
3. Assemble the Bowls:
β’ In serving bowls, start with a base of cooked rice. Arrange the steamed broccoli, cucumber slices, and shredded carrots around the rice.
β’ Top with the sliced honey-ginger chicken and drizzle generously with Yum Yum sauce.
β’ Garnish with fresh cilantro for a pop of color and flavor.
4. Serve:
β’ Serve immediately, enjoying the sweet, spicy, and creamy elements all in one bowl!
