Zesty Shrimp & Avocado Rice Bowls with Cilantro Lime Sauce
Ingredients:
1 pound large shrimp, peeled and deveined
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon cumin
1/4 teaspoon garlic powder
Salt and pepper to taste
2 cups cooked rice (white or brown)
1 ripe avocado, diced
1/2 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced
1/4 cup chopped cilantro
For the Cilantro Lime Sauce:
1/2 cup sour cream or Greek yogurt
1/4 cup chopped cilantro
2 tablespoons lime juice
1 tablespoon water
1/4 teaspoon salt
Pinch of black pepper
Directions:
Prepare the Shrimp:
In a medium bowl, toss the shrimp with olive oil, chili powder, cumin, garlic powder, salt, and pepper.
Cook the Shrimp:
Heat a large skillet over medium-high heat. Add the shrimp and cook for 2–3 minutes per side, or until pink and cooked through. Remove from heat and set aside.
Make the Cilantro Lime Sauce:
In a small bowl, whisk together the sour cream (or Greek yogurt), chopped cilantro, lime juice, water, salt, and black pepper until smooth.
Assemble the Bowls:
Divide the cooked rice among four bowls. Top each bowl with cooked shrimp, diced avocado, halved cherry tomatoes, sliced red onion, and chopped cilantro.
Drizzle with Sauce:
Drizzle each bowl generously with the cilantro lime sauce.
Serve Immediately:
