Lemongrass Coconut Fish Parcels ππΏπ₯₯π
Ingredients π
4 white fish fillets (like cod, snapper, or halibut) π
2 stalks lemongrass, finely chopped πΏ
1 can (400ml) coconut milk π₯₯
2 tablespoons fish sauce π§
1 tablespoon soy sauce πΆ
1 tablespoon lime juice π
1 teaspoon sugar π¬
1 small red chili, thinly sliced πΆοΈ (optional for heat)
1 tablespoon ginger, finely grated π±
2 garlic cloves, minced π§
A handful of fresh cilantro or basil leaves πΏ
4 sheets of parchment paper or banana leaves π
Salt & pepper to taste π§π§
Lime wedges for serving π

1. Prepare the Marinade π₯£
In a bowl, combine the coconut milk π₯₯, fish sauce π§, soy sauce πΆ, lime juice π, sugar π¬, ginger π±, garlic π§, lemongrass πΏ, and sliced chili πΆοΈ.
Whisk gently until the mixture is fragrant and smooth πΈ.
2. Marinate the Fish π
Place the fish fillets in a shallow dish.
Pour about half of the coconut marinade over the fillets π₯₯π.
Let it marinate for 20β30 minutes in the fridge βοΈ (so the flavors soak in!).
3. Assemble the Parcels β¨
Preheat your oven to 180Β°C (350Β°F) π₯.
Place each fish fillet in the center of a piece of parchment paper or banana leaf π.
Spoon a little extra marinade over the top π₯₯.
Add a few fresh cilantro or basil leaves πΏ.
Fold the paper or leaves over the fish and seal tightly, folding the edges like wrapping a present π.
4. Bake the Parcels π½οΈ
Arrange the parcels on a baking sheet.
Bake for 15β18 minutes until the fish is tender and flakes easily with a fork π΄.
(If using banana leaves, they'll lightly toast and smell AMAZING πΏπ₯).
5. Serve and Enjoy πΈβ¨
Place each parcel onto a plate. Let everyone unwrap their own at the table for a little "surprise" moment ππ½οΈ!
Serve with steamed jasmine rice π and extra lime wedges π on the side.
