1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons soy sauce

1 tablespoon cornstarch
1 teaspoon ginger paste
1 teaspoon garlic paste
For the Coating:

1 cup all-purpose flour
1/2 cup cornstarch
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup cold water
For the Sauce:

2 tablespoons vegetable oil
1 bell pepper, diced
1 medium onion, diced
3-4 green chilies, sliced (adjust to taste)
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon chili paste or sauce (adjust to taste)
1 tablespoon sugar
1 teaspoon ginger paste
1 teaspoon garlic paste
1/4 cup water
1 teaspoon cornstarch mixed with 2 tablespoons water (for thickening)
Chopped green onions for garnish
Instructions:
Marinate the Chicken: In a bowl, combine the chicken pieces with soy sauce, rice vinegar, cornstarch, ginger paste, and garlic paste. Mix well and let it marinate for at least 30 minutes.

Prepare the Coating: In a large bowl, mix together the flour, cornstarch, baking powder, salt, and pepper. Gradually whisk in the cold water until you have a smooth batter.

Coat the Chicken: Dip each marinated chicken piece into the batter, ensuring it is well-coated. Shake off any excess batter.

Fry the Chicken: Heat oil in a deep pan or skillet over medium-high heat. Fry the chicken pieces in batches until golden brown and crispy, about 4-5 minutes per batch. Remove and drain on paper towels.

Prepare the Sauce: In a separate pan, heat the vegetable oil over medium heat. Add the diced bell pepper, onion, and green chilies. Stir-fry until the vegetables are tender.

Add the Sauce Ingredients: Stir in soy sauce, rice vinegar, chili paste, sugar, ginger paste, and garlic paste. Cook for 2 minutes.

Thicken the Sauce: Add water and bring to a simmer. Stir in the cornstarch-water mixture to thicken the sauce. Cook for another minute until the sauce is glossy and thickened.

Combine Chicken and Sauce: Toss the crispy chicken pieces in the sauce until well-coated. Garnish with chopped green onions.
