🔥 Meal-Prep Chicken with Broccoli, Mushrooms & Rice 🍗🥦🍄🍚

🛒 Ingredients:
For the Chicken & Veggies 🍗🥦:
600 g chicken breast, cubed
2 tbsp sesame oil (or vegetable oil)
400 g broccoli florets
250 g mushrooms, sliced
1 onion, sliced
1 tbsp sesame seeds (optional)
For the Sauce 🥢:
4 tbsp soy sauce
3 tbsp oyster sauce
1 tbsp hoisin sauce (or honey)
2 tbsp rice vinegar (or lime juice)
3 garlic cloves, minced
1 tsp grated ginger
1/2 tsp chili flakes (optional)
For the Rice 🍚:
2 cups jasmine or basmati rice
4 cups water
Pinch of salt
👨🍳 Instructions:
Cook rice in salted water until fluffy. Divide into 4 meal-prep containers.
Heat sesame oil in a large wok or skillet. Cook chicken until golden, then remove.
Add onions, mushrooms, and broccoli to the pan, stir-fry for 4–5 minutes until tender-crisp.
In a bowl, whisk together soy sauce, oyster sauce, hoisin, vinegar, garlic, ginger, and chili flakes.
Return chicken to the pan, pour in sauce, and toss until coated.
Divide evenly into containers alongside the rice. Sprinkle sesame seeds if desired.
Let cool before sealing. Store in the fridge for up to 4 days. Reheat in microwave 2–3 minutes.

Add carrots, bell peppers, or snap peas for color and crunch.
Swap chicken for tofu, shrimp, or beef strips.
Double the sauce if you like it extra saucy.
