Pan-Seared Cod in Tomato Basil Sauce 🐟🍅🌿✨
Ingredients:
- 4 cod fillets (6 oz each)
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
For the Tomato Basil Sauce:
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 4 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
- 1 teaspoon sugar (to balance acidity)
- 1/2 cup cherry tomatoes, halved (optional)
- 1/4 cup fresh basil, chopped
- Salt and black pepper, to taste
Directions:
1. Season the cod fillets with salt, pepper, garlic powder, and paprika.
2. Heat 2 tablespoons olive oil in a skillet over medium-high heat. Sear the cod fillets for 3-4 minutes per side until golden and cooked through. Remove and set aside.
3. In the same skillet, add 1 tablespoon olive oil and sauté the onion for 2-3 minutes until soft. Add the garlic and cook for 1 minute.
4. Stir in the diced tomatoes, tomato paste, oregano, red pepper flakes, and sugar. Simmer for 7-8 minutes until the sauce thickens slightly. Add cherry tomatoes if using.
5. Season with salt and pepper to taste, then stir in the fresh basil.
6. Return the cod fillets to the skillet and spoon the tomato basil sauce over the fish. Let simmer for 2 more minutes to combine flavors.
Garnish with extra fresh basil and serve with rice, crusty bread, or steamed vegetables.
