These Crispy Coconut Shrimp are golden and crunchy on the outside, tender inside—and paired with a sweet-heat mango chili dipping sauce, fluffy coconut rice, and a creamy chili garlic mayo drizzle. 🧾 Ingredients (Serves 4)

🦐 Crispy Coconut Shrimp
• 1 lb large shrimp, peeled & deveined (tails on optional)
• ½ cup flour
• 2 eggs, beaten
• ¾ cup shredded coconut (unsweetened or sweetened for extra crunch)
• ¾ cup panko breadcrumbs
• ½ tsp paprika + salt & pepper to taste
Oil for frying (or bake/air fry option)



🍚 Coconut Rice
• 1½ cups jasmine rice
• 1 cup coconut milk 🥥
• 1 cup water
• ½ tsp salt



🥭🌶️ Mango Chili Dipping Sauce
• 1 ripe mango, peeled & diced 🥭
• 1 tbsp sweet chili sauce
• 1 tbsp lime juice 🍋
• ½ tsp red pepper flakes (optional)
• Pinch of salt

Blend all ingredients until smooth. Chill until ready to serve.



🔥🥣 Chili Garlic Mayo
• ½ cup mayo
• 1 tbsp sriracha or chili garlic sauce
• 1 clove garlic, finely grated 🧄
• Juice of ½ lime
• Pinch of salt



🔥 Instructions

1. Make the Coconut Rice
• Rinse rice. Add to a pot with coconut milk, water, and salt.
• Bring to a boil, then reduce heat, cover, and simmer for 15 minutes.
• Remove from heat and let it sit covered for 5 mins, then fluff.



2. Prepare & Cook Shrimp
• Set up a breading station: flour (seasoned), beaten eggs, and coconut+panko mix.
• Dredge shrimp: flour → egg → coconut-panko. Press to coat well.
• Fry in hot oil (350°F) for 2–3 mins until golden and crispy, or bake at 425°F for 12–15 mins (flip halfway), or air fry at 400°F for 8–10 mins.



3. Make Sauces
• Blend mango chili sauce ingredients until smooth.
• Whisk together chili garlic mayo until creamy. Adjust spice to taste!



4. Assemble & Serve
• Plate coconut rice and arrange crispy shrimp on top or alongside.
• Serve with a side of mango chili sauce and drizzle of chili garlic mayo.
Garnish with cilantro, lime wedges, or extra chili flakes if desired! 🌿🍋
