Cook the rice according to package instructions. Preheat the oven to 200Β°C (400Β°F). In a bowl, mix all meatball ingredients until combined, then roll into small balls. Place on a baking sheet and bake for 20–25 minutes until golden. Meanwhile, mix all sauce ingredients in a small bowl and chill. Once meatballs and rice are done, arrange rice in bowls, top with meatballs, cucumber, tomatoes, red onion, and a dollop of creamy dill sauce. Garnish with more fresh dill.
