For the Meatballs:
500g ground pork or beef π
1 small onion, finely chopped π§
1 garlic clove, minced π§
1 egg π₯
3 tbsp breadcrumbs π
3 tbsp fresh dill, chopped πΏ
1 tsp salt π§
Β½ tsp black pepper
For the Bowl:
1 Β½ cups basmati or jasmine rice π
Β½ cucumber, thinly sliced π₯
1 cup cherry tomatoes, halved π
ΒΌ red onion, thinly sliced π§
For the Creamy Dill Sauce:
Β½ cup sour cream or Greek yogurt π₯
1 tbsp mayonnaise
2 tbsp fresh dill, chopped πΏ
1 tsp lemon juice π
Salt & pepper to taste
π¨βπ³ Instructions:
Cook the rice according to package instructions. Preheat the oven to 200Β°C (400Β°F). In a bowl, mix all meatball ingredients until combined, then roll into small balls. Place on a baking sheet and bake for 20β25 minutes until golden. Meanwhile, mix all sauce ingredients in a small bowl and chill. Once meatballs and rice are done, arrange rice in bowls, top with meatballs, cucumber, tomatoes, red onion, and a dollop of creamy dill sauce. Garnish with more fresh dill.

Swap pork for turkey or chicken for a lighter version.
Add pickled onions or grated carrots for extra zing.
