🛒 Ingredients:
For the Bowl:
2 chicken breasts, grilled and sliced 🍗
1 cup cooked white rice 🍚
1 medium sweet potato, peeled and cubed 🍠
1 ripe avocado, halved 🥑
Salt, pepper, olive oil 🧂🫒
For the Fresh Salsa:
1 cup cherry tomatoes, halved 🍅
1/2 red onion, diced 🧅
1 avocado, diced 🥑
Fresh cilantro, chopped 🌿
Juice of 1 lime 🍋
Salt & pepper to taste
👨🍳 Instructions:
Preheat the oven to 200°C (400°F). Toss sweet potato cubes with olive oil, salt, and pepper, then roast for 20–25 minutes until golden. Season chicken breasts with salt and pepper, grill until cooked through, then slice. For the salsa, mix diced tomatoes, onion, avocado, cilantro, lime juice, salt and pepper. Assemble bowls with rice, grilled chicken, roasted sweet potato, salsa, and half an avocado per bowl. Sprinkle with extra cilantro if desired and serve warm or cold.
