Ginger Sesame Salmon with Snap Pea Stir-Fried Noodles
Asian-Inspired Ginger Sesame Glazed Salmon with Crisp Snap Pea Noodle Stir-Fry
Ingredients:
For the Salmon:
4 salmon fillets (6 oz each), skin-on
3 tablespoons low-sodium soy sauce
2 tablespoons honey
1 tablespoon sesame oil
1 tablespoon fresh ginger, grated
2 cloves garlic, minced
1 tablespoon sesame seeds
1 tablespoon olive oil
Green onions, thinly sliced for garnish
For the Snap Pea Stir-Fried Noodles:
8 oz rice noodles (or soba noodles)
2 cups fresh snap peas, trimmed
1 red bell pepper, thinly sliced
1 carrot, julienned
1 tablespoon fresh ginger, grated
2 cloves garlic, minced
2 tablespoons low-sodium soy sauce
1 tablespoon sesame oil
1 tablespoon rice vinegar
1 teaspoon honey
2 tablespoons olive oil
2 green onions, sliced
1 tablespoon sesame seeds
Directions:
In a shallow dish, combine soy sauce, honey, sesame oil, grated ginger, and minced garlic. Place salmon fillets in the marinade, flesh side down. Cover and refrigerate for 30 minutes.
Meanwhile, cook the rice noodles according to package instructions. Drain, rinse with cold water, and set aside.
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Remove salmon from marinade (reserve the marinade). Place salmon skin-side down on the prepared baking sheet.
Bake for 12-15 minutes, or until salmon flakes easily with a fork.
While the salmon is baking, prepare the stir-fried noodles. Heat olive oil in a large wok or skillet over medium-high heat.
Add ginger and garlic, stir-fry for 30 seconds until fragrant.
Add snap peas, bell pepper, and carrot. Stir-fry for 3-4 minutes until vegetables are crisp-tender.
In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, and honey.
Add the cooked noodles to the vegetables in the wok. Pour the sauce over and toss everything together. Cook for 2-3 minutes until everything is well combined and heated through.
Pour the reserved salmon marinade into a small saucepan and bring to a boil. Reduce heat and simmer for 2-3 minutes until slightly thickened to create a glaze.
To serve, divide the stir-fried noodles among four plates. Top each with a salmon fillet, drizzle with the reduced glaze, and sprinkle with sesame seeds and sliced green onions.
