🍗 For the Chicken Drumsticks:
4 chicken drumsticks
1 tbsp olive oil 🫒
1 tsp smoked paprika
½ tsp garlic powder 🧄
½ tsp chili powder (optional for heat) 🌶️
Salt & pepper to taste 🧂
🍚 For the Rice:
1 cup basmati or jasmine rice
2 cups water 💧
Pinch of salt 🧂
Optional: black sesame seeds for topping
🥗 For the Salad:
1 cup lettuce or mixed greens 🥬
1/2 cucumber, sliced 🥒
1/2 cup corn kernels 🌽
10–12 cherry tomatoes, halved 🍅
2 tbsp red onion, finely chopped 🧅
1 tbsp olive oil + juice of ½ lemon for dressing 🍋
Salt & sesame seeds to finish 🌿
👨🍳 Instructions:
Preheat oven to 200°C (390°F). Mix olive oil, paprika, garlic, chili powder, salt, and pepper. Rub the spice mix over the drumsticks and bake for 35–40 minutes until golden and cooked through. Meanwhile, cook rice in salted water until fluffy. Toss all salad ingredients with olive oil, lemon juice, and a pinch of salt. Assemble the bowl: a scoop of rice, 2 drumsticks, and a colorful salad. Sprinkle with sesame seeds and serve fresh.
