🛒 Ingredients
For the Chicken Curry:
500g chicken breast 🍗, cut into cubes
2 tbsp olive oil or ghee 🫒
1 onion 🧅, finely chopped
3 garlic cloves 🧄, minced
1 tbsp fresh ginger, grated
1 tsp curry powder 🌿
1 tsp ground cumin
1 tsp paprika
200ml coconut milk 🥥 or heavy cream
100ml chicken broth
Salt & pepper to taste
Fresh cilantro 🌿 for garnish
For the Sides:
2 cups cooked basmati rice 🍚
1 cup carrots 🥕, diced and steamed
1 cup green peas 🌱, steamed
👨🍳 Instructions
Heat oil or ghee in a pan, sauté onions until soft, then add garlic and ginger. Stir in curry powder, cumin, and paprika. Add chicken cubes and cook until lightly browned. Pour in coconut milk and chicken broth, then simmer 15–20 minutes until chicken is tender and sauce creamy. Season to taste. Meanwhile, cook rice and steam peas and carrots. Serve curry with rice and vegetables on the side, topped with fresh cilantro.
💡 Notes & Variations
Swap coconut milk for cream if preferred.
Add chili powder for more heat 🌶.
Use tofu instead of chicken for a vegetarian version.
