Teriyaki Salmon with Sesame Noodle Penne

Glazed Teriyaki Salmon over Sesame Garlic Penne Noodles

Ingredients:

2 salmon fillets, skin-on

2 tablespoons low-sodium soy sauce

1 tablespoon honey

1 tablespoon sesame oil

2 teaspoons rice vinegar (no alcohol)

2 teaspoons grated ginger

2 cloves garlic, minced

1/4 teaspoon black pepper

1 teaspoon cornstarch mixed with 2 teaspoons water

200g penne pasta

1 tablespoon toasted sesame seeds

2 green onions, sliced

1 tablespoon olive oil (for pasta)

1/2 teaspoon garlic powder (for pasta)

Optional: steamed broccoli or snap peas on the side

Directions:

In a small bowl, mix soy sauce, honey, sesame oil, rice vinegar, ginger, garlic, and black pepper. Pour half into a shallow bowl with the salmon fillets and marinate for 15 minutes.

Meanwhile, bring a large pot of salted water to a boil and cook penne until al dente. Drain and toss with olive oil and garlic powder. Set aside.

Heat a skillet over medium heat. Remove salmon from marinade and cook skin-side down for 4–5 minutes. Flip and cook for another 2–3 minutes until cooked through. Set aside.

In the same pan, pour the remaining sauce. Add the cornstarch slurry and stir until thickened (about 1–2 minutes).

Return the salmon to the pan, spoon glaze over the top to coat well.

Serve salmon over the sesame garlic penne. Garnish with sesame seeds and green onions. Add veggies if desired.
